#15 ~ Mashed Potato and Beef Teriyaki

I ate dinner meal for breakfast! Last night, I was so excited to see the potato in heart shape and I decided to bake it at once and made it into mashed potato. While the potato is baking, I also made beef teriyaki. This morning  I heated everything back to the oven and voila! I had a good breakfast. I'm not even hungry until 2pm.

Double Baked Mashed Potato
1 potato
1 tablespoon Parmesan cheese (I used freshly grated)
1 tablespoon milk
salt and pepper to taste

Wash the potato properly, bake in the oven for about 30 minutes or until cook. Cut a very thin the top part like a lid. Scoop out the potato using spoon to make a boat shape. Smash the potato using fork until smooth, add milk, cheese, salt and pepper. Continue mixing until all blended. Scoop the potato mixture back to the boat shape potato. Bake for 10-15 minutes in 180 ̊C(350 ̊F).

Beef Teriyaki, just bake in olive oil, seasoned with salt and pepper
cucumber and romaine lettuce with sesame dressing
kiwi and egg pudding for dessert

This is how I eat salad most of the time, I like dipping it in a dressing.
Enjoy my Hearty Mashed Potato Meal!

I love the potato heart - I can see why you wanted to eat it! I also really love how you made your cucumbers and kiwis so pretty - almost too pretty to eat!

One of these days soon I will make the potato boats. I have heard of doing this, but it always seemed so difficult - you've made it not so!!! Thank you!
