#18 ~ Shrimp and Scallop Pasta Salad

Summer is officially here! After the Dragon Boat Festival yesterday, after eating those heavy sticky rice, it's time to lighten up my meal a bit. I have here left-over penne from my previous Baked Penne with Spinach, few shrimps and scallops and mix them with romaine lettuce. Additional beef wrapped in tortilla, plus refreshing watermelon for dessert.


1 cup cooked penne
few shrimps and scallops, cooked in salt
1 bundle romaine lettuce
1 tablespoon lemon juice
1 tablespoon extra-virgin olive oil
grated cheese (I used Parmesan)
pine nuts
fresh basil (optional)
salt and pepper to taste
* Toss all the ingredients, chill for at least 30 minutes.

The cheese tortilla flavor with peppered beef and cheese.

One last treat, here's the red sweet watermelon :)
